Brie and


  1. In a bowl whisk together the ingredients for the dressing

  2. Stir in the cranberries, brie and pecan nuts

  3. Place a lettace leaf on top of an oatcake and top with a spoonful of the cranberry, brie and pecan mixture

  4. Repeat with the rest of the mixture and serve

  • 1 tbsp dried cranberries, roughly chopped

  • 100g brie, cut in to roughly 1cm cubes

  • 6 pecan nuts, roughly chopped

  • 4 chicory leaves (or lettace leaves)

  • 3 tsp hazelnut or walnut oil

  • 1 tsp. white wine vinegar

  • ¼ tsp Dijon mustard

  • salt
