Instructions
Put the chicken into a deep sauce pan, cover with the cold water and bring to the boil.
Reduce to a simmer and add the leeks, carrot, rice and bay leaf along with 1 teaspoon sea salt, cover and simmer for 35 mins.
Remove the chicken from the pot. Take the meat off the bones, shop roughly and return to the pan. Discard the bones.
Bring to the boil once more, season with ground black pepper , a pinch of cloves and sea salt if needed.
Discard the bay leaf. Serve in deep bowls garnished with chopped parsley.
Serve with Nairn's rough oatcakes.

Ingredients:
1 chicken portion on the bone
1 litre (2.2pints) cold water
1 bay leaf
2 leeks - washed, trimmed and sliced
1 carrot - peeled and grated
60g (2 oz) long grain rice
Sea salt
Ground black pepper
Pinch of ground cloves
Chopped fresh parsley
