Cucumber Pickle on
Nairn's Oatcakes
Instructions
Slice the cucumber. You can use a peeler, sharp knife or ideally a mandolin. Try to cut the slices as thin as you can
Mix the cucumber and onion in a large bowl
Add the sugar, salt and vinegar and mix well to combine
Make 1 hour ahead of when you want to use it if possible
To serve, place a slice of cheddar on an oatcake, then on top place 1/2 tbsp. of cucumber pickle

Ingredients:
1 cucumber
1 small onion
110g (4 oz) sugar
1 tsp salt
75ml (3 fl oz) cider vinegar or white wine vinegar
Roughly 125g cheddar cheese (or another cheese of your choice), cut into slices
