Cucumber Pickle|Oatcake Recipes|Nairn's

Instructions

  1. Slice the cucumber. You can use a peeler, sharp knife or ideally a mandolin. Try to cut the slices as thin as you can
  2. Mix the cucumber and onion in a large bowl
  3. Add the sugar, salt and vinegar and mix well to combine
  4. Make 1 hour ahead of when you want to use it if possible
  5. To serve, place a slice of cheddar on an oatcake, then on top place 1/2 tbsp. of cucumber pickle

  • 1 tsp salt
  • 75ml (3 fl oz) cider vinegar or white wine vinegar
  • Roughly 125g cheddar cheese (or another cheese of your choice), cut into slices
