Mango and Feta Salsa


  1. To make the salsa, simply mix all ingredients together and taste for seasoning.

  2. To assemble, simply place one or two pieces of chicken on top of the oatcake then spoon about ½ tbsp. of the salsa on top.

  • For the salsa:

  • 1 small or ½ medium mango, cut in to roughly 1cm dice

  • 1 small or 1/2 medium red onion, finely chopped

  • a good squeeze of lemon or lime juice

  • 75g feta cheese, cut in to roughly 1cm dice

  • ½ red chilli, deseeded and finely chopped (optional)

  • 2 tbsp chopped fresh coriander

  • Salt and pepper

  • Roughly 120g of cooked chicken, cut or torn in to bite sized pieces
