To make the salsa, simply mix all ingredients together and taste for seasoning.
To assemble, simply place one or two pieces of chicken on top of the oatcake then spoon about ½ tbsp. of the salsa on top.
For the salsa:
1 small or ½ medium mango, cut in to roughly 1cm dice
1 small or 1/2 medium red onion, finely chopped
a good squeeze of lemon or lime juice
75g feta cheese, cut in to roughly 1cm dice
½ red chilli, deseeded and finely chopped (optional)
2 tbsp chopped fresh coriander
Salt and pepper
Roughly 120g of cooked chicken, cut or torn in to bite sized pieces
