Smoked salmon with Mediterranean scrambled eggs

Instructions

  1. Scramble the egg in a little butter or olive oil. 

  2. Mix in the tomato and basil.

  3. Season with black pepper

  4. Place on the oat cakes and top with the smoked salmon

  • Small slice of smoked salmon

  • Knob of butter or olive oil

  • 1 organic / omega 3 rich egg, beaten

  • 2 sun dried tomatoes, drained and chopped

  • 2 basil leaves torn

  • Black pepper
