1. Carefully slick the skin of the mango and peel off. Cut the mango into slices.
  2. Slice the black pudding (around 1.5-2cm thick)
  3. Dry fry the black pudding for 2-3 minutes each side.
  4. Place a knob of butter in a separate pan and fry the mango for 2 minutes each side on a high heat until slightly browned.
  5. Serve the black pudding on top of the Oat Cracker Thin and top with a slice of mango.
