Heat the oil and butter in a small frying pan.
Add the shallot and sauté for 2 minutes.
Beat together the rest of the ingredients and pour into the pan. Using a wooden spoon stir the mixture until it is cooked to your taste.
Spoon on to Nairn’s oat cakes and serve immediately.
