Pizza Oatcakes - Tomato, basil & vegan cheese

Instructions
  1. Add a large basil leaf, or several small leaves to each oatcake
  2. Arrange the tomato slices onto the oatcakes, covering the edges
  3. Add a sprinkling of cheese on top of each tomato in a heap
  4. Drizzle with a little olive oil
  5. Place under the grill on a medium heat, keeping an eye on them
  6. When the tomatoes have softened and the cheese is melted, remove them and sprinkle a tiny amount of cheese and allow this to melt
  7. Add another basil leaf to each and a final (optional) drizzle of olive oil and serve

  • A handful of vegan cheese shreds
  • 5-6 cherry or salad tomatoes cut into thin slices
  • Fresh basil leaves
  • Olive oil
