Sally's Oat Biscuits

Instructions
  • Cream 50g sugar and 125g margarine or butter until smooth
  • Gradually work in the oats and flour until you have a consistent mixture
  • Roll out the mixture to about 1 cm thick and cut into rounds, you should get about 10 -12 good sized biscuits
  • Bake at 200C/180C Fan for 15 – 20 minutes until golden brown
  • Remove from the oven and allow to cool
  • Whilst the biscuits cool mix 110g icing sugar with 55g margarine/butter and a few drops of vanilla essence until smooth
  • When the biscuits have completely cooled spread on the icing and top with a second biscuit to make a sandwich
  • Enjoy!
