Beetroot and apple Waldorf salad
Combine the beetroot, apples, celery, walnuts and parsley in a bowl.
Whisk together the walnut oil, lemon juice and some seasoning, pour over the beetroot salad and mix well.
Pile on top of the oatcakes to serve.
Who’d have thought the apple waldorf salad dish would have made such an excellent topping?

- 1 small cooked beetroot, diced
- half green apple, cored and diced
- 1tsp fresh parsley, chopped
- 1tsp lemon juice
- 1tsp walnut oil
- black pepper and salt to season
